2 eggs or substitute (like aquafaba or flax egg)
¼ cup maple syrup OR honey OR agave
Optional: ¼ cup sugar for sweeter muffins
½ cup milk of choice
½ cup or more berries
Preheat oven to 350°F.
Oil or line 12 to 15 muffin tins with papers.
Cream butter with half the mix until light and fluffy.
Add maple syrup, honey, or agave along with eggs and beat well.
Gradually blend in remaining mix and milk until fully combined.
Gently fold in berries.
Spoon batter into muffin tins until ¾ full.
Bake for 25 minutes or until lightly golden and a toothpick inserted into the center comes out clean.
Cool on a wire rack and store in a sealed container to maintain freshness.
